It’s sweet corn season……

I recently got some sweet corn, from a roadside stand along the highway. It was 90 degrees the day that I had planned on freezing it, so I opted for the option–freezing sweet corn without blanching/cooking.
If you haven’t done your sweet corn yet this year, give this a try.
1/4 c. sugar
3 tsp. salt
4 c. ice water
16 cups corn
Mix together, bag and freeze.
No need to boil. When ready to eat………unthaw, heat thoroughly in a saucepan, oven or microwave, but do NOT bring to a boil.






This is a great idea! I’m going to give it a shot. We have corn coming out of our EARS!!
